Breakfast Pancake recipe

Breakfast Pancake recipes are usually easy and fun to make. Check the temperature of the griddle with a few drops of water. Once the water sizzles, the griddle is ready. Lightly grease the griddle and pour 1/4-cup batter onto hot surface for each pancake. Tossing the pancake over takes some skill though. When bubbles begin to appear on the surface of the pancakes and the edges appear dry, its time to turn them over.

When flipped over, the underside will appear a golden brown. Once flipped over, pancakes take half the time to cook. Pancakes are best eaten hot off the griddle. If you are storing them, cover them with an aluminum foil. Serve hot homemade pancakes with butter and syrup.

You can cook a batch of pancakes for a leisurely Sunday breakfast. Do not stack hot pancakes over each other as the steam will make them all limp. Stack them on a cookie sheet and keep them warm in a mildly hot oven. Store leftover pancakes in the freezer.

  • Do not flatten the pancake batter on the griddle with the spatula, or you will not get a fluffy pancake

  • Setting the griddle at the right temperature is vital to a good pancake. If the temperature is too high, the edges will be burnt or overcooked.

  • Never turn the pancakes around too much on the griddle. You will end up with tough pancakes

  • Ensure that the breakfast pancake batter is smooth and lump free.

  • The batter must be at the right temperature for the leavening to react. Don't leave it around at room temperature for too long or take it right out of the refrigerator to cook

  • Homemade Pancake batter must be made at the right consistency - runny enough to spread on the griddle. Soften thickened pancake batter with little milk or water.

  • You can substitute half the flour in the pancake recipe with whole-wheat flour or cornmeal.

  • You can place your homemade pancake mixture in a jug to make it easier to pour.

  • Some breakfast pancake topping options - powdered sugar, maple syrup, fresh fruit, applesauce, jam, peanut butter, chocolate chips, dates, raisins
